Going Paleo

So, I have been paleo for about two months now...I think. It's really easy, and I don't crave food which is the nice part. I also feel much healthier. I've lost about 15 pounds too.

I have discovered baking with almond flour, and I gotta tell you, it has to be the most forgiving flour I've ever baked with.

I make muffins about three times a week. The flour is so forgiving that I don't even use a recipe, I just wing it each time.

This is what I usually put in:

Cup almond flour/meal
tbsp hazelnut meal
tbsp walnut meal
2 tbsp ground flax
2 tbsp organic unsweetened grated coconut
dash of baking soda
dash of baking powder
dash of sea salt
two smashed ripe banana's
1 egg
if the batter is not liquid enough I add more egg white

I split this in to six muffin tins and bake at 375 for 25-27 minutes

I don't like cooking, albeit I like baking.
I however dislike preparing food so much that I am terrible cook anyway.
I only know a few dishes I practiced enough to make them decent, and I really really have to be in special mood
to want to cook something new.

So when you wrote "almond flour" - my eyes popped out, lol
First I ever heard of almond flour, Milo the gourmet chef!

Your recipe looks delicious! do you deliver???
And congrats on losing 15 lbs!!!!!

Believe it or not, almond flour is just ground up almonds...nothing else. And it bakes so nicely. I'm not very inclined in the kitchen either, but today I made a cream of mushroom soup from scratch with coconut milk. It was really good. And I also made chicken thighs "breaded" in coconut and almond flour with a few spices. I wouldn't normally make two coconut dishes at once but the soup was an after-thought and I'd already put the chicken in the oven. lol

Oddly no. It's a very weird thing. I never thought it could exist but it does....it's expensive, but it's heath benefits are so good, compared to wheat and other grain products.

It's true, almonds are very healthy - most nuts are I suppose. (although technically almonds are not nuts but seeds?)

Now I wonder if any nut can be grind into a flour and used as such?
