Great recipe thread

I don't mean to toot my own horn, but I've created a really good soup. It's a fall soup. I don't know exact amounts, because I'm not very good at following rules but here is what I put in it.

1 large butternut squash peeled and cubed

1 medium yam not peeled, and cubed

1 medium sweet potato not peeled and cubed

about four medium carrots

a large sweet onion (my migraine made me forget this today)

a bunch of garlic (I love garlic and I think it's sooo good for you)

ginger to taste (again...so good for you)

some yellow curry

salt to taste

a dash of cinnomen (can't spell right now sorry)

a glug of pure vanilla extract

a third of a package of creamed coconut (I add this at the end) You could probably just use a can of coconut milk if you don't have creamed coconut.

Enough water to cover all of the above plus and inch or two above the line (too much water makes a thin soup, too little makes it too thick)

All you do is boil it all until it's soft then blend it (I use a hand blender)

It's really, really easy to make (I just made it with a migraine) and it's pretty quick because you don't peel anything but the squash.

It taste sooooooooo good. Smile

For tired, migraining Migraineur
a recipe for a really easy, tasty, and most importantly -FAST, almost no preparation salmon dinner:

~ salmon fillets, as many as needed
~ sesame or olive or cornflower oil or any - whatever you like, as much as you like
~ slices of either or some or all
a. pineapples- can be fresh or canned,
b. oranges
c. lemons

~ salt, pepper
~ spices according to your personal taste (just awhile ago I found a bottled spice product specifically for salmon
at our local grocery store, very good)
~ bacon slices if you like, which you arrange on the casserole's bottom and on which you put salmon fillets
~ rice, white or brown, again your choice
~ ready to eat boxed lettuce
~ one or two tomatoes
~ smaller sized can of corn
~ dressing of your choice

Arrange either bacon slices on the bottom of the pan or pour the oil and on this, lay the salmon.
On the salted, peppered and spiced salmon, arrange the chosen fruit slices.
Cover the pot, and shove all this into preheated oven,
bake it it as long as you think it should be to be sure it is well done.

I usually do it at 400'F for 45 min to one hr, depending how big is the salmon.
(I'd rather overdo it than risk it underdone)

Boil the rice according to instruction - usually for each cup of rice, two cups of water,
and for two cups of rice - appx 1/4 tsp of salt or less.

And if I may - the rice cooker pot is a great invention!
You just pour the rice, water in, set the pot 'chotchkies' on, and it takes care if itself! amazing! I love mine!

Dump the greens into the bowl, add tomato, canned corn, set it aside,
when the salmon and rice are ready- add the dressing.

This is the easiest dinner I ever did in my life.
Sometimes I substitute the salmon for already marinated chicken wings.

At the mall close to me, they have this small meat market, where they have the best honey-garlic chicken wings,
also hot wings.
Again, all I have to do is dump the wings straight from the bag into the pot, and shove it into the oven.

It's my favorite way of cooking!!!
